Description

This fluffy cottage cheese cloud bread is light, high in protein, and naturally gluten-free. It’s the perfect low-carb alternative to traditional bread with only a few simple ingredients.


Ingredients

  • 3 eggs
  • 1/3 cup cottage cheese
  • 1/4 teaspoon cream of tartar
  • Pinch of salt (optional)

Instructions

  • Preheat oven to 300°F and line a baking sheet with parchment paper.
  • Separate egg whites from yolks.
  • In a clean bowl, whip egg whites with cream of tartar until stiff peaks form.
  • In another bowl, blend cottage cheese with egg yolks until smooth.
  • Gently fold the whipped egg whites into the cheese mixture.
  • Spoon onto baking sheet into mounds.
  • Bake for 25–30 minutes until golden.
  • Cool completely before serving.

  • Use full-fat or 2% cottage cheese for best texture.
  • Let eggs come to room temperature before whipping for stronger peaks.
  • Store leftovers in the fridge up to 3 days or freeze.
