This fluffy cottage cheese cloud bread is light, high in protein, and naturally gluten-free. It’s the perfect low-carb alternative to traditional bread with only a few simple ingredients.

- 3 eggs
- 1/3 cup cottage cheese
- 1/4 teaspoon cream of tartar
- Pinch of salt (optional)
Instructions
- Preheat oven to 300°F and line a baking sheet with parchment paper.
- Separate egg whites from yolks.
- In a clean bowl, whip egg whites with cream of tartar until stiff peaks form.
- In another bowl, blend cottage cheese with egg yolks until smooth.
- Gently fold the whipped egg whites into the cheese mixture.
- Spoon onto baking sheet into mounds.
- Bake for 25–30 minutes until golden.
- Cool completely before serving.
Notes
- Use full-fat or 2% cottage cheese for best texture.
- Let eggs come to room temperature before whipping for stronger peaks.
- Store leftovers in the fridge up to 3 days or freeze.
