- 4 egg whites
- 1/4 tsp cream of tartar
- 1/2 cup full-fat cottage cheese
- 1/2 tsp vanilla extract
- 1/3 cup fresh or frozen blueberries
Instructions
- Preheat oven to 300°F (150°C) and line a baking tray with parchment.
- Whip egg whites in a clean bowl until foamy.
- Add cream of tartar and continue beating until stiff peaks form.
- Blend cottage cheese until smooth; mix in vanilla.
- Gently fold egg whites into cheese mixture in thirds.
- Fold in blueberries gently.
- Spoon onto baking tray into 5–6 rounds.
- Bake for 25–30 minutes until golden.
- Let cool in oven for 5 minutes, then cool on rack

- Don’t overmix when folding—keep the batter airy.
- Use parchment between rounds if storing.
