Description

A light, high-protein and gluten-free snack or breakfast, blueberry fluffy cottage cheese cloud bread is soft, airy, and bursting with real fruit flavor


Ingredients

  • 4 egg whites
  • 1/4 tsp cream of tartar
  • 1/2 cup full-fat cottage cheese
  • 1/2 tsp vanilla extract
  • 1/3 cup fresh or frozen blueberries

Instructions

  • Preheat oven to 300°F (150°C) and line a baking tray with parchment.
  • Whip egg whites in a clean bowl until foamy.
  • Add cream of tartar and continue beating until stiff peaks form.
  • Blend cottage cheese until smooth; mix in vanilla.
  • Gently fold egg whites into cheese mixture in thirds.
  • Fold in blueberries gently.
  • Spoon onto baking tray into 5–6 rounds.
  • Bake for 25–30 minutes until golden.
  • Let cool in oven for 5 minutes, then cool on rack
